Purchasing Tips

Purchasing new commercial kitchen equipment is a significant decision for many businesses. When in the market for new equipment, please consider the following:

Commercial Fryers

  • Look for fryers with frypot insulation to reduce standby losses, resulting in a lower idle energy rate.
  • To identify high efficiency commercial fryers, consult the list of ENERGY STAR qualified models on the U.S. Web site.

Commercial Hot Food Holding Cabinets

  • Look for a hot food holding cabinet with insulated walls to minimize heat losses.
  • The hot food holding cabinet should have an idle energy performance that meets the maximum recommended energy consumption of 4.7 kW (16,000 Btu/hr) recommended by FEMP, as measured by the ASTM F2140: Standard Test Method for the Performance of Hot Food Cabinets. This rating is for a full-size hot food holding cabinet and would be scaled proportionally for other sizes.
  • To identify high efficiency commercial holding cabinets, consult the list of ENERGY STAR qualified models on the U.S. Web site.
  • The California Energy Commission maintains a database of hot food holding cabinets that are certified to meet current efficiency standards.

Commercial Steam Cookers

  • A connectionless steam cooker will save on installations costs since no steam line is required.
  • To identify high efficiency commercial steam cookers, consult the list of ENERGY STAR qualified models on the U.S Web site.
